Good mature fantasy books?

I've read The Game of Thrones series up to the fifth and most recent book (A Dance With Dragons) and I am just about to finish the second book in the Kingkiller Chronicles by Patrick Rothfuss (A Wise Man's Fear) and was looking for suggestions for more fantasy books, I would prefer it to be a little more mature like A Game of Thrones but I am enjoying the Kingkiller Chronicles. Also if its a series a COMPLETE one would be nice, I hate waiting for books to come out lol.Good mature fantasy books?
