Jordan's 'Wheel of Time' series is a very good read (and there's plenty of it, which I also like).

'A Game of Thrones' is one of the best fantasy novels I have read, and I am waiting - not very patiently - for Book 5 of the series.

I am a not a Terry Goodkind fan.
