Best adult fantasy books?
The Attolia series - Megan Turner. A great trilogy, definitely.

For dragons, and beasts - The Farseer books - Robin Hobb (be warned you'll get sucked in! There are quite a few different trilogies based in this world). Quite dark and angst

The Belgariad series and the Mallorean - David Eddings. Lighter in tone but incredibly addictive. I can re-read these over and over.

The Fionavar Tapestry Series - Guy Gavriel Kay. High fantasy there!

I thoroughly recommend Terry Pratchett fantasy for the lighter fun tone with a serious message. I started with Guards Guards! and that worked.

Raymond Feist - The Magician (and the along side trilogy about the Tsurani)

For magical beasts, Mercedes Lackey writes a lot - possibly she is known best for the Heralds of Valdemar books with the Companions, but I quite liked the Black Gryphon Trilogy, and the Dragon Jousters series

I hear tell that Temeraire books by Naomi Novik are worth it - but I have not read them myself - they are sort of AU history with dragons.

Hope you like some!
