What are some great fantasy novels?

I am a big fan of fantasy series. I really liked all of Robin Hobb's series and just finished Game of Thrones. I want to wait to read A Clash of Kings until HBO finishes airing the first season of the show and I kind of want to wait til the series is finished. What are some good fantasy series to check out while I wait to continue A Song of Ice and Fire. I would rather a trilogy or even a one book fantasy novel. Any suggestions? What are some great fantasy novels?

Good Omens by Terry Pratchett is hilarious..

Perhaps a little obvious (after The Golden Compass came out in the cinemas) but His Dark Materials Trilogy by Philip Pullman is captivating, if you can get Nicola Kidman out of your head that is. Luckily I read it when I was younger before any of that happened!
